Wild Rice Pilaf
How to make aromatic wild rice pilaf. A healthy side dish that's perfect served alongside chicken or other main dishes. Fresh scallions, celery and mushrooms add complex, earthy flavors. This recipe is super simple done with a rice cooker.

• 2 1/2 cups brown rice, long grain
• 1/4 cup wild rice
• 1/2 cup scallions, finely chopped
• 1/2 cup celery, finely chopped
• 1 cup mushrooms , sliced, fresh or dried
(button, crimini, shiitake... your choice)
• 3 2/3 cups chicken broth *
(regular, not low-sodium)
• 1 bay leaf
• 2 TBSP butter
• 1/2 TBSP garlic, minced
• 1/4 tsp crushed black pepper

Cooking with a Rice Cooker:
(Super simple, mindless, and clean-up's a breeze.)
- Put all ingredients into a rice cooker
. Stir the mixture and try to make sure the rice is evenly spread out. Press the "cook" button. You'll have delicious wild rice pilaf in about 45 minutes, depending on your rice cooker. Now you can work on your other dishes or clean up while you wait.
- When the rice cooker finishes and switches to "keep warm", wait 5 minutes. Then open the lid and fluff the rice, making sure to get all the way to the bottom.
- Serving suggestion: Goes great with chicken and sauteed vegetables. Enjoy!
Alternatively, Cooking on the Stove Top:
- Heat chicken broth in separate sauce pan.
- Meanwhile, melt butter in a dutch oven
over medium heat. Add garlic, scallions and celery. Stir over medium high heat until the mixture starts to sweat, about 1 minute. Add mushrooms, salt and pepper. Stir until mushrooms start to wilt.
- To the pan, add brown rice and wild rice. Stir to coat rice granules.
- Add boiled chicken broth from separate sauce pan and bay leaf. Stir the mixture and try to make sure the rice is evenly spread out. Bring to boil, then lower heat and simmer covered for 45 minutes. Do not uncover during this process.
- When the time is up, uncover the pot and fluff the rice, making sure to get all the way to the bottom.
- Serving suggestion: Goes great with chicken and sauteed vegetables. Enjoy!
*Your rice cooker may need more or less chicken broth. Different brands/models may use various heat amounts and cook times. Please refer to your owner's manual if you are unsure and haven't experimented enough to make a judgment call.
